Cauliflower Rice

Cauliflower Rice

Introduction

This is an excellent low-carb and gluten-free alternative to rice. This is an excellent low-carb and gluten-free alternative to rice.
Number of Servings: 4

Ingredients

    1 head Cauliflower, chopped
    1/2 cup Onion, minced
    1/2 cup Celery, minced
    1 clove Garlic, minced
    Olive Oil Cooking Spray
    Butter Spray
    Salt and/or other seasonings, to taste (I use Morton's Nature's Seasons - Seasoning Blend w/No MSG.)

Directions

Process chopped cauliflower in food processor, until texture resembles rice. Heat large skillet over medium heat. Coat skillet liberally w/cooking spray. Saute onion and celery for approximately 10 minutes. Add garlic and saute for 1-2 minutes. Add cauliflower, spray butter, and salt/seasonings . Cover and cook for approximately 10 minutes, stirring frequently.

Serving Size: Makes four 1/2 cup servings.
