Stuffed Portabella

Ingredients

    1 portabella mushroom
    1/4 cup spinach (just a small handful)
    1/2 cup couscous
    2 slices of tomato, chopped
    1 clove of garlic
    Dash of paprika and Fennel seed
    1 Tbsp. Feta cheese
    1 pat of unsalted butter
    1/2 cup water

Directions

Remove stem from mushroom and chop. In a bowl, mix chopped stem and next 6 ingreadients. Mix well, add butter and mix in. Place mushroom in glass baking dish, stuff it with the mixture. Pour water in pan so that the mushroom does not stick or dry out.
Bake at 350 degrees for about half an hour.
