Ingredients

    I can black beans rinsed & drained
    1/2 cup red onion, chopped
    1 cup red and/or yellow peppers, chopped

    DRESSING:
    Juice of 1 lime
    3 TBS fresh cilantro, chopped
    2 TBS olive oil
    1 TBS minced pickled jalapeno
    1.5 tsp minced garlic
    1 tsp cumin
    salt to taste

Tips

This is MUCH better if prepared a day ahead of time and allowed to sit in the fridge so flavors mix
