Chicken Tomato Soup (hcg, low fat)

Introduction

1 protein & 1 vegetable for the hCG diet. 1 protein & 1 vegetable for the hCG diet.
Number of Servings: 1

Ingredients

    100g red, ripe tomato
    100g chicken breast, cubed
    1/2 cup chicken stock, low sodium
    1 cup water
    1 tsp dehydrated onion
    1/2 tsp granulated garlic
    Salt/pepper to taste

Directions

In a small sauce pot, put diced tomatoes, chicken stock, water, onion, & garlic. Boil for 2-3 minutes until tomatoes are disintegrating. (At this point, I remove from heat & use an immersion blender to make smooth.)
Add the chicken & boil for another few minutes until chicken is cooked.
Pour into a bowl and add salt/pepper to taste.
