Low Carb Almond Sugar Cookies

    1 1/4 cup almond flour
    1 cup Splenda or other sweetener (I used a low carb, fiber-based sweetener, LC-Sweet White)
    1/4 cup butter, at room temp
    1 tsp vanilla extract


Dough is VERY sticky and thick. You may need to put butter on your fingers as you form dough into balls. For the same reason, it's better to flatten cookies with your fingers instead of a fork because dough will stick to the fork.


Pre-heat oven to 350. Line baking sheet with parchment paper. Stir together flour and sweetener. Blen in butter, egg, and vanilla until well-mixed. Form into 1-inch balls on cookie sheet and flatten each with a fork. (Optional: sprinkle with additional sweetener.) Bake for 8 minutes or until set, but not brown. Allow to cool for 2 minutes on baking sheet then remove to wire racks to cool.
