Cranberry Oat Muffins




Number of Servings: 12

Ingredients

    1 cup oatmeal
    1 cup 2% milk
    1 cup whole wheat flour
    1/2 cup brown sugar
    1/2 cup unsweetened applesauce
    1/4 cup eggbeaters
    1 tsp. baking powder
    1/2 tsp. baking soda
    1 tsp. cinnamon
    1 cup dried sweetened cranberries


Directions

Combine oats and milk and set aside
Preheat the oven to 400 degrees.
Spray muffin pan with cooking spray or use baking cups
In another bowl mix the dry ingredients together.
Combine the oatmeal and milk with the applesauce and eggbeaters.
Add wet ingredients to dry and mix until just combined. Add cranberries.
Spoon muffin mixture into muffin pan.
Bake for 20-25 minutes or until done.
Remove from pan and cool.

Serving Size: Makes 12
