Baked Garlic Cheddar Chicken

Ingredients

    Chicken Breast, 2 (Fileted in half to make 4)
    Salt, 1/8 tsp
    Black Pepper (Ground), 1/4 tsp
    Dried Oregano, 1/4 tsp
    Parsley Flakes, 1/4 tsp
    Sharp Cheddar Cheese Shredded, 3/4 cup
    Parmesan Cheese Shredded, 1/4 cup
    Panko Bread Crumbs, Parmesan Herb, 1/2 cup
    Minced Garlic, 2 tsp
    I can't believe it's not Butter!, 4 tbsp

Directions

Preheat oven to 350 degrees F (175 degrees C).
Melt the butter in a saucepan over low heat, add garlic and cook until tender, about 5 minutes.
In a bowl, mix the bread crumbs, Parmesan cheese, cheddar cheese, parsley, oregano, pepper, and salt.
Coat each chicken breast in the garlic butter, then dip into the bread crumb mixture.
Arrange the coated chicken breasts in a 9x13 inch baking dish.
Drizzle with any remaining butter and top with any remaining bread crumb mixture.
Bake 25 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

  • This is just like a recipe I always made, but I never added the garlic to the butter, yum and I would use crushed crispy rice cereal or buttery round crackers depending on what I have on hand, but panko worked great. - 3/25/13
