Marinated Carrots

Introduction

Make a day or two ahead, it's even better when it marinates for 48 hours. Make a day or two ahead, it's even better when it marinates for 48 hours.
Number of Servings: 12

Ingredients

    6 cups carrots, sliced and cooked
    1 onion, medium, sliced thin
    1 green pepper, large, chopped in small pieces
    1 can tomato soup
    1/2 cup white vinegar
    1/4 cup canola oil
    1/2 cup sugar
    1 tsp mustard (yellow or dijon)
    1/2 tsp pepper
    3 tsp Worchestershire sauce

Directions

Boil carrots until just tender (do not over cook!). Drain and rinse with cold water to stop the cooking. Mix in a large bowl with all other ingredients. Marinate in the fridge overnight or longer.

2 Points Plus (Weight Watchers) per serving.
