Homemade Chicken Soup

Introduction

This recipe consist of 2 whole chicken cavities. Can no longer feed a family with 1 whole chicken. Ingredients

    2 whole chicken bones with meat
    4 roasted garlic gloves from roast chicken
    1 yellow onion, sliced
    8 cups of water
    2 bay leaf
    1/2 can tomato paste
    4 celery sticks, chopped
    2 medium potato, chopped
    2 large carrots, chopped
    1 TBSP Oregano
    1 TBSP Thyme
    1 TBSP chili flakes
    1/2 TSP Basil
    1 TSP sea salt
    1 TSP pepper



Tips

Do not add any stock as chicken bone makes the stock.

You can add chick pea or white beans to soup.


Directions

Add 4 cups of water and chicken cavities into large soup pot. Water should nearly cover bone, add more if necessary. Boil water and chicken bones till meat falls off the bone, approximately 1 hour. Remove clean bones. Add 4 more cups of water, then add celery, carrots, potato, paste and spice mixture. Bring to a boil and simmer uncovered till vegetables are tender. During simmering, taste, if you find it too spicy add some water but not too much.
