This recipe is the perfect choice for Meatless Monday. Braising greens are a mix of greens that include kale, chard, collards, mustard, bok choy, raddichio, and turnip greens. They're really great because you get several varieties of dark, leafy, chock-full-of-vitamins greens that are so versatile. Plus, they're delicious - each bite bursts with flavor and texture.

Ingredients

    2 Tbsp olive oil
    1 medium onion, peeled and sliced
    2 cloves garlic
    1 cup crimini mushrooms, sliced
    1/2 half pound whole wheat ziti or rotelli
    4 cups braised greens
    4 cups of mixed braising greens

Tips

You can add some whitemeat chicken tenders to this if you need to have some meat to make it meal. Fall is the perfect time for this dish when all of the greens are in season.


Directions

Set 4 qts of water to boil. Meantime add oil to skillet and saute onion until it starts to brown. Add garlic, saute one minute. Add mushrooms, saute until they release their moisture. Remove skillet from heat. Add pasta to boiling water and cook according to package instructions. Add braising greens to cooking pasta during last 5 minutes of cooking time. Drain pasta and greens, retaining one cup of cooking water. Add pasta, greens and one cup of retained pasta water to skillet with sauted onions and mushrooms, toss, and heat through. Serve immediately with parmesan cheese if desired.
