Rise and Shine Carrot Muffin

Introduction

Another recipe I found that I had to tweak, ok, ok so I was missing a few things but it came out great! Another recipe I found that I had to tweak, ok, ok so I was missing a few things but it came out great!
Number of Servings: 12

Ingredients

    1 1/2 cups Whole Wheat Flour
    1/2 cup Brown Sugar
    1/2 tsp Cinnamon
    1 1/2 tsp (1/2 tbsp) Baking Powder
    1 1/2 cups grated carrots (about 3 med. carrots)
    1/2 cup unsweetened Applesauce
    1/2 cup 2 % Milk
    1/4 cup egg substitute

Directions

Mix together dry ingredients, add wet ingredients and mix until moistened. Scoop into muffin tins sprayed with cooking spray. Cook at 375 for 20 to 25 minutes.

Serving Size: Makes 12
