Cucumber Crisps

Introduction

Everyone loves this recipe. quick, easy and the cucumbers taste like crispy pickles. Everyone loves this recipe. quick, easy and the cucumbers taste like crispy pickles.
Number of Servings: 6

Ingredients

    3 1/2 cups thinly sliced cucumbers
    3/4 cup of sugar, Stevia can be subed
    1/2 large onion, sliced thin, I like to use a white onion
    1/2 medium sweet pepper, red, yellow or orange
    1/2 cup cider vinegar
    1 tsp salt
    1/2 Tbsp celery seed

Tips

I use a Mandolin for fast and even cucumber slices. I have also added veggies like carrots, cauliflower etc to make a vegetable medley.


Directions

In a medium serving bowl, combine all ingredients. Cover and refrigerate for at least 1 hour, stirring occasionally. Serve with a slotted spoon.
