1 lb. red fingerling potatoes (about 12) 1 Tbsp. melted butter 1/4 tsp. salt 1/4 tsp. freshly ground black pepper 3 Tbsp. reduced fat extra sharp cheddar 2 Tbsp. thinly sliced green onion Cooking spray
Preheat broiler. Scrub the potatoes and place in a single layer in a microwave safe bowl. (Do NOT pierce the potatoes with a fork.) Cover the bowl with plastic wrap but do not allow the wrap to touch the food and vent. Microwave on high for 5-6 minutes. Let stand five minutes until cool enough to touch. Cut the potatoes in half. Drizzle evenly with butter and salt & pepper. Layer cut side up on a foil lined cookie sheet sprayed with PAM. Top evenly with cheese. Broil two minutes or until the cheese melts. Sprinkle evenly with green onions.
