Beet Salad with Blue Cheese

Introduction

This is my adaptation of a recipe I found on Taste of Home website. This is my adaptation of a recipe I found on Taste of Home website.
Number of Servings: 3

Ingredients

    4 whole fresh beets
    Cooking spray'3/4 cup orange juice
    1/2 shallot, chopped
    3 cups fresh arugula and spinach blend
    1 1/2 Tbsp blue cheese, crumbled
    4 Tbsp Wishbone Italian Fat-free salad dressing

Tips

You can top each salad with chopped hazelnuts or your favorite nut. You can also use orange and red beets together. If your beets come with the beet greens add some of those to the greens.


Directions

Scrub beets and cut into wedges; place on a baking sheet coated with cooking spray. Lightly coat beets with additional cooking spray. Bake at 350 degrees for 40-50 minutes or until tender, turning occasionally.
Divide greens among 3 salad plates. Divide the beets among the 3 plates. Sprinkle dressing over the greens and beets. Sprinkle the blue cheese over salad.
