Ground Turkey & Potato Casserole

Ingredients

16 oz ground turkey, 93% lean
10 small red skin potatoes, raw, quartered
1 cup low fat cheddar or colby cheese, diced
1 cup carrots, chopped
1/2 cup green peppers, chopped
1 cup onions, chopped
2 large eggs, fresh
1 cup nonfat milk
Directions
Brown onion, carrots, pepper and ground turkey in large skillet.
Quarter red skin potatoes and boil in water until slightly tender then drain.
Place turkey mixture into large casserole dish and add drained potatoes.
Sprinkle with grated cheese.
Whisk eggs and milk and pour over the top.
Bake at 350*F for 30 minutes or until the cheese is melted and slightly browned.

I used. ingredients on hand, mix of red, yellow and orange peppers, celery & onions. To add additional flavor, used a package of zesty Ital. dressing as seasoning. Used an oven proof skillet/steamed the potatoes cut to like sizes,then placed the cheese, eggs & milk & baked. Excellant 1 pot meal. - 2/2/13

After reading comments I made a few adjustments. I used onions, green, red & yellow bell pepper, carrots, broccoli, cauliflower, reg. potatoes and lots of seasonings! I topped with cubed cheese, but after 30 minutes threw some velveeta on top and stuck it in for another 10 minutes. Very good! - 11/10/12

I really liked this recipe though I was glad that I seasoned it the same as I would for a hamburger or shepheards pie, I also found that the potatoes would have been better as mashed with chicken stock and you can definitley leave out the milk and egg mixture as it did not thicken up. Good though. - 10/26/09
