Ground Turkey & Potato Casserole

Introduction

A main dish casserole that will clear out the vegetable crisper in your refrigerator. A main dish casserole that will clear out the vegetable crisper in your refrigerator.
Number of Servings: 6

Ingredients

    16 oz ground turkey, 93% lean
    10 small red skin potatoes, raw, quartered
    1 cup low fat cheddar or colby cheese, diced
    1 cup carrots, chopped
    1/2 cup green peppers, chopped
    1 cup onions, chopped
    2 large eggs, fresh
    1 cup nonfat milk

Directions

Brown onion, carrots, pepper and ground turkey in large skillet.
Quarter red skin potatoes and boil in water until slightly tender then drain.
Place turkey mixture into large casserole dish and add drained potatoes.
Sprinkle with grated cheese.
Whisk eggs and milk and pour over the top.
Bake at 350*F for 30 minutes or until the cheese is melted and slightly browned.

    This was a pretty good recipe. The egg/milk mixture didn't thicken as well as I thought it would. It definitely needed a higher fat content milk or more eggs to thicken it but it was delicious and I may just add a little WW flour to the mixture to thicken it just a little. - 5/8/08

    I substited zucchini for the pepper and left off the milk and eggs. I also added paprika, garlic and Mrs. Dash for extra flavor. - 5/4/08

    If you don't like eggs, you may want to reconsider using them in this recipe...it became very eggy with them. Otherwise, it was tasty. I added Mrs. Dash for seasoning midway through cooking the turkey and veggies in the skillet. - 12/25/07

  • I used. ingredients on hand, mix of red, yellow and orange peppers, celery & onions. To add additional flavor, used a package of zesty Ital. dressing as seasoning. Used an oven proof skillet/steamed the potatoes cut to like sizes,then placed the cheese, eggs & milk & baked. Excellant 1 pot meal. - 2/2/13

  • After reading comments I made a few adjustments. I used onions, green, red & yellow bell pepper, carrots, broccoli, cauliflower, reg. potatoes and lots of seasonings! I topped with cubed cheese, but after 30 minutes threw some velveeta on top and stuck it in for another 10 minutes. Very good! - 11/10/12

  • Made substitutions for ingredients I didn't have: used feta instead of cheddar, added a zucchini. Read comments, so decreased milk to 3/4 cup. Spiced it up with paprika and garlic, salt and pepper. Very good flavors.

  • This was really good. I added 1tsp of salt and pepper for taste. Very simple to make. I agree with some of the comments...the egg mixture made the casserole a little runny but my husband and I still liked it. I will definitely make this again. - 7/23/12

  • Sounds like this recipe will have to be adapted to suit each persons taste. Will give this one a try as is the first time, then adapt it when making it the second time.
    As for spicing it up, Italian seasoning might be a good start.

  • Was probably user error, but no success with this recipe... whole family hated it. I subbed mushroom for the green pepper because out of green pepper and they all like mushroom... could have been what killed it I don't know. - 6/27/11

  • This was very good and had leftovers for lunch the next day. I definitely will make this again, but as everyone else has said I would add more spice. A touch of salt, pepper & chili powder does wonders. I cooked it in a pirex dish and the egg/milk mixture thickened up nicely. - 1/12/11

  • This was a lot more tasty than I thought it would be. It also was good recipe for me to add to my recipes because of the low sodium. I didn't have a cup of carrots so, I added some broccoli to it. - 11/17/09

  • I really liked this recipe though I was glad that I seasoned it the same as I would for a hamburger or shepheards pie, I also found that the potatoes would have been better as mashed with chicken stock and you can definitley leave out the milk and egg mixture as it did not thicken up.
