Banana Muffins with Applesauce & Splenda

Introduction

Number of Servings: 12

Ingredients

    1 3/4 c flour
    1 T baking powder
    1/2 t salt
    3/4 c Splenda (sugar substitute, no calories)
    1/4 c butter
    1/4 c unsweetened applesauce
    2 eggs
    1 c mashed banana

Tips

To reduce calories, I substitute Spenda for the sugar and applesauce for 1/2 the butter, saving 80.1 calories per muffin.


Directions

Preheat oven to 350. a 12 hole muffin tin.

Blend Splenda and butter together until light; add eggs and mix until fluffy. Add bananas. Add baking powder and salt. Mix flour in just until moistened.

Place into prepared pan. Bake until firmly set, 15-20 minutes. Cool on rack for 10 minutes, then remove from pan.
