Introduction

Delicious low carb casserole that makes a great dinner and even better leftovers! Delicious low carb casserole that makes a great dinner and even better leftovers!
Number of Servings: 6

Ingredients

    2 (or more) cups chopped cooked chicken
    1 cup sour cream
    1 tsp chicken bouillon
    3/4 cup mayo
    1 tsp lemon juice
    1 tsp curry powder
    salt and pepper to taste
    2 cups chopped broccoli (or combo of broccoli and asparagus)
    3/4 cup cheddar cheese

Tips

If using frozen veg, precook and squeeze the water out or the casserole will be watery at the bottom. Leftover veg work well....good recipe for using up leftovers!


Directions

Cook chicken if not already done...deboned, skin removed rotisserie chicken works fine.
Spray a large casserole dish with cooking spray. Layer broccoli (and asparagus) on bottom. Top with a layer of cooked chicken. Mix remaining ingredients except cheese and pour over top to cover. Top with grated cheese. Bake at 350 for 20 minutes until bubbly.

Serving Size: Makes 6 servings.
