Roasted vegetables in V8 juice

Introduction

Sliced peeled potato, yam, zucchini - Oven roasted Sliced peeled potato, yam, zucchini - Oven roasted
Number of Servings: 3

Ingredients

    Wash and peel medium potato, medium yam, medium zucchini. Slice in 1/4 inch sliches. Slice 3-5 mushrooms and chop one shallot, distribute in pan among sliced vegetables. Cover with V8 Low sodium Juice and roast uncovered 40 minutes at 350 degrees F.

    Serve as is or sprinkle with cheese shreds.

Directions

Arrange slices in pan with yam on bottom. Layer mushrooms, shallots, zucchini, potato on top.

Pour half cup low sodium V8 and roast in 350 degree oven between 45-60 minutes.

Ready to serve!

Serving Size: Makes 3 cups mixed roasted vegetables
