Wayne's Mom's Chicken Rice Casserole

Introduction

This is a one dish meal with chicken thighs and rice. Quite good. This is a one dish meal with chicken thighs and rice. Quite good.
Number of Servings: 6

Ingredients

    1 package of Knorr French Onion Recipe Mix
    1 can of Campbell's low fat cream of mushroom soup + 3 cans of water
    6 boneless, skinless chicken thighs
    3/4 cup Jasmine Rice
    1/4 cup Wild Rice

    Butter Pam
    8 oz sliced mushrooms (optional)

Tips

If you use a different rice mixture the amount of water in the mix must be adjusted.


Directions

1. Spray inside of 9" x 12" casserole dish with butter pam
2. Evenly spread onion soup mix over bottom of casserole dish
3. Evenly spread Jasmine rice over bottom of dish
4. Evenly sprinkle wild rice on top of jasmine rice
5. (optional) Evenly place sliced mushrooms on top of rice
6. Place rinsed and patted dry boneless. skinless chicken thighs on rice (mushrooms)
7. Bring cream of mushroom soup and 3 cans of water to low boil. Stir until mixed throughly.
8. Pour mushroom soup and water over chicken
9. Place in oven preheated to 350 degrees and bake for 90 minutes (or until water has evaporated)

Serving Size: Makes 6 servings consisting of a single thigh and a cup of rice
