Number of Servings: 12

Ingredients

    1/3 cup white sugar
    2 tablespoons all-purpose flour
    1/4 teaspoon salt
    1 cup light sour cream
    1 egg, lightly beaten
    1 teaspoon vanilla extract
2 15-oz. cans light diced peaches (packed in juice), well drained
    1 tablespoon ground nutmeg
    1/2 cup blanched, sliced almonds

Tips

This custard filling can also be baked in a pie crust or a graham cracker pie crust. Hmmm ... now I'm thinking about using crushed ginger snaps to make a crust.

Directions

Preheat oven to 400 degrees F.

Drain the juice from the peaches, using a colander over the sink. Leave draining until needed.

Whisk together the sugar, flour and salt. Beat in the sour cream, egg, and vanilla. Stir in the diced peaches. Pour the mixture into 12 individual flan (or creme brulee) dishes. Assemble dishes onto a large cookie sheet to prevent spillage. Sprinkle each dish with freshly ground nutmeg, then top with the almonds, spread evenly on each dish.

Bake in the preheated oven for 12 minutes, then reduce the oven temperature to 350 degrees and continue baking until the custard is set, about 30 minutes.
Remove from oven; let cool slightly before serving.

Serving Size: makes 12 individual "tarts".
