Introduction

There are some things that cannot be compromised, even when you're losing weight, and that is a good sandwich loaf. Here's a fabulous and easy recipe that makes around 14 slices. There are some things that cannot be compromised, even when you're losing weight, and that is a good sandwich loaf. Here's a fabulous and easy recipe that makes around 14 slices.
Number of Servings: 14

Ingredients

    1lb white bread flour (approx 3.5 cups)
    1 TBS yeast
    2TBS sugar
    1 cup of warm water

Directions

Combine the yeast, sugar and water. Stir and leave for a few minutes until the mixture gets a frothy head on it. Add to the flour in a stand mixer, and using the dough hook, mix for 10 minutes. Leave for 5 minutes, then give it a quick stir to knock some of the air out of it and transfer to an oiled bowl.
Place the bowl in the oven on the top shelf. On the lower shelf, place a 9 x 12 casserole dish containing a couple of cups of boiling water. Close the door and leave for two hours.
After the two hours, throw the now cold water away and turn the dough out onto a well floured work surface. Beat the dough down and then fold it in on itself and beat again. Repeat once more for a total of three beatings, and leave for 5 minutes.
After 5 minutes, beat down once more, and roll the dough up. Place in an oiled 1 lb loaf tin and cover with a clean cloth. Leave to rise for 1 hour.
After the hour, place the loaf in a preheated 350 degree hour, and cook until brown on top (about 25 - 30 minutes). When you take the loaf out of the oven, leave it in the loaf pan for about 10 minutes, then place on wire rack to cool.
