There are some things that cannot be compromised, even when you're losing weight, and that is a good sandwich loaf. Here's a fabulous and easy recipe that makes around 14 slices.
1lb white bread flour (approx 3.5 cups)
1 TBS yeast
1 cup of warm water
Place the bowl in the oven on the top shelf. On the lower shelf, place a 9 x 12 casserole dish containing a couple of cups of boiling water. Close the door and leave for two hours.
After the two hours, throw the now cold water away and turn the dough out onto a well floured work surface. Beat the dough down and then fold it in on itself and beat again. Repeat once more for a total of three beatings, and leave for 5 minutes.
After 5 minutes, beat down once more, and roll the dough up. Place in an oiled 1 lb loaf tin and cover with a clean cloth. Leave to rise for 1 hour.
After the hour, place the loaf in a preheated 350 degree hour, and cook until brown on top (about 25 - 30 minutes). When you take the loaf out of the oven, leave it in the loaf pan for about 10 minutes, then place on wire rack to cool.
Serving Size: Makes 2 2lb loaf, approx 14 slices
