Introduction

This was a throw-together casserole using taco meat and corn tortillas along with some salsa con queso leftover from the weekend. You could add anything you like (obviously veggies would be great too!) Number of Servings: 10

Ingredients

    Turkey, Ground turkey, 93% lean, 16 oz
    Corn Tortillas, 16 tortilla, medium (approx 6" dia)
    Kraft 2% Shredded Cheddar Cheese, 1 cup
    Velveeta Cheese Product, 12 oz
    Salsa, 1 cup
    Onions, raw, 1 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    Spinach, cooked, 1 cup
    Lawry's Taco Seasoning, 12 tsp
    Tortilla Chips, 1 oz

Directions

Layer half of the tortillas in a 9x13 baking dish.
Next put half the taco mixture (turkey, onions, peppers, spinach, garlic, spices) on top.
Next put half the cheddar.
Repeat.
Top with melted salsa con queso and then crushed tortilla chips on top of that.
Bake, covered, at 375 for 30 minutes until bubbly and heated through.

Serving Size: Makes 10 Even Servings from a 9x13 pan
