pumpkin flax smoothie

Introduction

i used chef meg's pumpkin smoothie recipe as the base for this. i've tweaked it a bit to suit my needs a little better--more protein, less refined sugar. it's still pretty carby, so might not be the best choice for some, but all the sugar is from whole fruit or stevia. i think it's pretty tasty, and it's got mad vitamins and nutrients. it's also very filling! it can be made the night before and refrigerated for a quick breakfast shake. i used chef meg's pumpkin smoothie recipe as the base for this. i've tweaked it a bit to suit my needs a little better--more protein, less refined sugar. it's still pretty carby, so might not be the best choice for some, but all the sugar is from whole fruit or stevia. i think it's pretty tasty, and it's got mad vitamins and nutrients. it's also very filling! it can be made the night before and refrigerated for a quick breakfast shake.

Ingredients

    1 cup plain greek low-fat yogurt (i use fage 2%)
    1/2 cup canned pumpkin, no additives
    1 large apple, cored and chopped, unpeeled
    1 large banana, broken into 4 or 5 pieces
    2 tbsp ground flaxseed
    1/2 tsp pumpkin pie spice
    2 rounded scoops vanilla whey protein powder (i use 365 everyday value brand from whole foods)

Directions

basically, put all the ingredients in a blender and blend until it's smooth. i put the apple chunks and a little pumpkin in first so that the apple peel gets blended thoroughly, then add the rest and blend between ingredients. split batch in half (it's large) and blend with ice if you want it to be more of a slushy.

Serving Size: makes 2 servings, 1.75-2 cups each
