Introduction

A twist on boring meatloaf! A twist on boring meatloaf!
Number of Servings: 12

Ingredients

    1 pound ground turkey
    1 egg, beaten
    1 cup tomato sauce
    1/4 cup Italian bread crumbs
    1/4 cup freshly grated Parmesan cheese, plus additional for topping
    1/2 red pepper, chopped
    1 small onion, chopped
    1/2 packet of Good Seasons Italian dressing mix
    1 (heaping) teaspoon crushed red pepper flakes
    salt and pepper

Directions

Preheat oven to 400. Generously spray muffin pan with cooking spray.

Combine all ingredients in a large bowl and mix using hands until well blended. Using a large spoon, generously fill each muffin slot and sprinkle each muffin with additional Parmesan cheese.

Bake for 25 minutes or until a light crust has formed on each muffin.

    Very good...controlled portions! I used ground meat substitute (frozen) and didn't add the Good Seasons. Maybe will try rolled oats instead of the breadcrumbs, for more fiber....lots of possibilities here! - 1/16/08

    I love these - although I would rather add a little less crushed red pepper. Love the addition of parmesan! I have overcooked them-still tastes great, but leaves a mess in the cupcake pan! Friend said she made them like big meatballs, and they kept their shape & no mess! DH loves this too! - 4/4/08

    These are amazing! If they get to juicy as some of you had said just drain the juice off about 5 mins before they are done and they get nice and crispy. And don't be afarid to add the crushed red peppers it doesn't make them to hot at all! Leftovers? Slice them up for a yummy sandwich!!! - 7/25/09

    I may these tonight and thought they were delicious. I cut down a little on the tomato sauce and used some crushed red pepper/black pepper herb that I had. I thought at first there was a little too much fresh red pepper but changed my mind after 2nd one. HAHA Also used Parmasean/Ramano cheese. - 3/11/09

    So yummy! I made this tonight. substituted and the bread crumbs with a slice of wheat bread and didn't add the Good Seasons Italian dressing mix. not sure how that changes the calories. - 1/8/08

    Very good! Spicy! I omitted the freshly chopped red peppers. They do initially come out of the oven with lots of juices from the turkey, but this soaks back in - you could use less tomato sauce if this is bothersome. Even better reheated! Tasty all the way around, even picky hubby liked them! - 4/22/09

    I made these into 6 servings and added paprika, garlic powder, and italian seasonings. I substituted mozzarella for parmesan and omitted the italian mix. Great flavor and portioning but next time I will use half the tomato sauce, they were a little too moist. Great recipe, will make again! - 5/23/09

    This is probably one of the best ground turkey recipes I have tried. Delicious. I did leave out the fresh red pepper and the italian dressing mix (didn't have any) and was still great. This will be made again and again. Thanks. - 5/20/09

    This recipe was a hit with my family - we enjoyed the added spiciness the red pepper flakes provided. I do recommend lining your muffin pan - the pan was challenging to clean when we were done. - 4/2/09

    Very yummy! I used just a couple of shakes of ground red pepper instead of the crushed red pepper...Other than that, everything just the same...I did actually have 2, but that with a half-cup of rice and a salad landed me just a tad over 300 calories for the whole meal...Pretty awesome, I'd say. - 4/1/09

  • Made this for the first time and my picky family LOVED it! I substituted with organic lean ground beef and Asiago cheese since I didn't have any Parm cheese or ground turkey. I also used hot chipotle Panko bread crumbs so I didn't use as much crushed red pepper flakes. Will definitely make again! - 11/11/13

  • Great Recipe - one I think I can have fun with. There was some liquid left in the cups so add some chopped fresh mushrooms either to the recipe or the bottom of each cup. Will probably double up the italian dressing mix. - 11/10/12

  • I was a little skeptical of these, but I absolutely loved it! It took me about 35 minutes to get them fully cooked, and the grease was floating on top of the muffin pan, but after letting them sit for a few minutes, a lot of it soaked back down into them, keeping them moist.   • Not a meatloaf fan but WOW! These are AMAZING! I agree that they were juicy at first.I won't cut back the tom. sauce next time b/c what I changed this time worked well. I transferred them to a cookie sheet after the 25 min. and broiled them until darker. This gave the whole outside a nice crunch! - 3/28/11

  • These were much tastier than expected. I used a 99% lean turkey, using the 1 Cup of tomato sauce kept them very moist inside. I did however make a few small changes. First, based on the recommendation of another I replaced 1/4 oats in place of bread crumbs. Second, I used a 1/2 envelope dry ranch. - 2/9/11

  • This recipe was a hit at our house. They smelled good, looked good AND tasted good. My picky 8 year old raved about them. The crusty top was the best part. Very flavorful and moist.
