Savory Zucchini Bread

Ingredients

1 1/2 medium zucchini -- shredded
1 1/2 teaspoons salt
1 1/4 cup egg beaters
3 tablespoons milk
4 tablespoons canola oil
½ cup grated Parmesan cheese
1 tablespoon garlic powder
1 teaspoon dried basil
1/4 teaspoon pepper
3 tablespoons finely chopped onion
1 cup flour
1 tablespoon baking powder
Tips
Directions
1) Grease and flour a 6-by-3 1/2 -by2-inch loaf pan: Set aside.
2) Toss the zucchini and salt together in a medium bowl. Let stand in a colander for 5 minutes or until, liquid drains out. Place zucchini between paper towels and press out as much liquid as possible.
3) In a medium bowl whisk the eggs, milk, oil, cheese, garlic powder, basil and pepper until well blended. Add zucchini and onion and mix well. In a separate bowl stir together the flour and baking powder; add to the zucchini mixture and stir just until evenly moist. Pour batter into prepared loaf pan and spread evenly to the edges. Bake in a 375-degree oven for 45 minutes or until a toothpick comes out clean. Let cool in pan for 15 minutes. Remove from pan to cool completely on a rack.
Serving Size: Makes 1 loaf cut into 12 slices
