Introduction

These are SUPER easy and incredibly delicious muffin sized breakfast eggs. I also like to refer to them as "Green Eggs & Ham" because of the green onions on top. Inspired from recipes on Pinterest.com.

These are SUPER easy and incredibly delicious muffin sized breakfast eggs. I also like to refer to them as "Green Eggs & Ham" because of the green onions on top. Inspired from recipes on Pinterest.com.

Number of Servings: 10

Ingredients

    10 Large Eggs
    1 Package Carl Buddig Honey Ham
    2 Green Onions
    1/4 C Monterey Jack Cheese
    Salt & Pepper to Taste

Tips

(You can also make just one or two of these at a time for a quick breakfast on the go. I planned the recipe for 10 because that's how many slices of ham are in a package of Carl Buddig.)


Directions

Preheat oven to 400 degrees.

Lightly spray a muffin pan with non-stick cooking spray. Line 10 cups with a slice of Carl Buddig honey ham. Crack open one egg per cup filling the ham as if it were a cupcake liner. Top with salt and pepper.

Bake for 11-13 minutes until the eggs are white. (Eating undercooked eggs can be dangerous so be careful.)

After you take them out of the oven, top each egg cup with a pinch of cheese and some green onion. Enjoy!
