Bountiful Black Bean Soup

Introduction

This is a great filling soup. You can make it vegetarian by subbing vegetable stock for the chicken stock. It really sticks to your ribs on a cold Winter's night! This is a great filling soup. Number of Servings: 8

Ingredients

    4 ears fresh corn cut from the cobb, or 2 C. frozen corn
    2 T. Extra Virgin olive oil
    1 medium onion, chopped
    4 cloves of garlic, minced
    8 c. chicken stock
    1 1/2 c. Bob's Red Mill Black Bean soup mix
    28 oz. can diced tomatoes
    2 c. diced butternut squash, large dice
    2 bay leaves
    1 t. dried thyme
    1 t. oregano
    1 t. smoked paprika
    Salt and pepper to taste

    (note that salt and pepper were not figured in to the nutritional information as this will vary with your personal taste).

Tips

Bob's Red Mill Black Bean Soup Mix is a combination of black beans, black eyed peas, navy beans, and pearled barley. If it isn't available, just use your own combination of these ingredients.


Directions

Saute the onions in the oil until translucent. Add the garlic and saute another minute. Pour in the stock making sure to deglaze the pan. Add remaining ingredients, and bring to a boil. Once it is boiling reduce heat to low, and simmer for 1 1/2 hours, stirring occasionally to keep the food from sticking.
