John's Rice Pudding

Introduction

This is an old recipe from my husband's family. It is so rich and creamy that I thought it would have too many calories and fat grams for me, but it doesn't. Try it and I think it might be one of your family's favorites too! This is an old recipe from my husband's family. It is so rich and creamy that I thought it would have too many calories and fat grams for me, but it doesn't. Try it and I think it might be one of your family's favorites too!
Number of Servings: 36

Ingredients

    2.5 cups Jasmin rice
    3 cups sugar
    6 cups water
    5 large, fresh eggs
    12 cups 2% milk
    6 tablespoons vanilla extract
    cinnamon and/or nutmeg to taste

Directions

In very larg pot combine 10 cups milk (reserving 2 cups), water and sugar; bring to a boil and add rice, stirring well. Lower heat, cover and simmer for 1 hour, or until mixure is "syrupy".
Meanwhile, in a medium large bowl, mix eggs, 2 cups milk and vanilla.
After the rice mixture is cooked; add egg mixure to it and simmer 1 min.
Take off stove and cool. Serve with a sprinkle of cinnamon and/or nutmeg.

Serving Size: makes 36 1/2 cup servings
