Vegetarian Chopped Liver

Introduction

Great when having company on crackers or pita breads cut up.... Great when having company on crackers or pita breads cut up....
Number of Servings: 20

Ingredients

    1 - 16 oz. can Sweet Peas
    2 Spanish Onions
    1 C. Chopped Pecans
    4 Hard Boiled Eggs
    Extra Virgin Olive Oil for Sauteing
    Salt & Pepper to Taste

Tips

Suggest putting pecans into a coffee bean grinder before mixing w/other ingredients - texture will be smoother.

I prefer Lite Salt - using approximately 1/4-1/2 tsp - also approx 1/4 tsp of pepper.


Directions

Use 1 Can Sweet Peas - drained
2 Spanish Onions - sauteed in EVOO until soft
1 cup chopped Pecans -
4 hard boiled eggs
Salt & Pepper to taste

Put all ingredients into food processor and blend until all blended together. Add salt and pepper


Serving Size: makes approx 4 cups (fits into a 1 quart container). 1 tbs serving on a cracker/pita bread/snack
