Ingredients

    1 cup whole wheat pastry flour
    1/2 cup bread flour
    1 cup rolled oats
    3 tbsp ground flaxseed
    15 oz canned pumpkin
    2 tsp baking powder
    1/4 tsp baking soda
    1 tbsp pumpkin pie spice
    1/2 tsp salt
    1 stick butter, melted
    3 tbsp blackstrap molasses
    3/4 cup z sweet
    1/2 cup 2% greek yogurt
    2 eggs
    2 tsp vanilla extract
    1/4 cup currants
    1/4 cup dried cranberries

Tips

if you use z sweet and not sugar, they will not brown regularly.


Directions

soak the currants in hot water for five minutes to soften. whisk dry ingredients (except z sweet) together. in a separate bowl, whisk together wet ingredients and z sweet. stir both mixtures together, add currants and cranberries, pour into muffin tins. bake for 20 minutes or until a toothpick inserted in the middle comes out clean. if you use z sweet and not sugar, they will not brown regularly.
