Rick's Spicy Delight( no meat)

Introduction

My husband has to abide by my recipes that are cheese free due to my lactose intolerance. I invented this recipe for spice and a little kick. He adds cheese on top of his dish and I eat it alone. Ingredients

    16 oz. dry no yolk noodles(prepare as directedon pkg.)
    1 tsp cumin
    1T. garlic minced(powdered form) or to your liking raw
    1/3 catsup(low Salt)
    1 can kidney beans, drained and rinsed
    1/2-1 tsp cayenne( how much kick do you like)
    1T. coriander seed ( or if you like cilantro)
    2-3 T dried minced onions
    3 diced serrano peppers, seeds removed( or 1 diced poblano pepper if you like it milder)



Tips

You can add cheese to your portion if you like.
You can add precooked turkey sausage crumbles or beef crumbles.
Just remember to add the calories to the total.


Directions

Boil noodles per directions and drain.
Mix in corn, beans and the minced onion.
Add peppers and spices and mix.
Put in 9/13 casserole dish that has been sprayed with oil.
Bake at 350 degrees for about 20-30 minutes.
