2 cup Yogurt, plain
2 tsp Garlic
2 Cucumbers peel and seeds removed
1/2 tsp Black Pepper
2 tsp Olive Oil
Yield: 2 1/2 cups
1 Serving = 1/4 cup
*final caloric intake is slightly less. The computed value was determined using the calories for cucumbers with peel and seeds. Eliminating these (as in recipe) should reduce the calories.
Drain yogurt for 1 hour in a cheesecloth-lined strainer to remove some of its water. In a bowl, combine the yogurt, garlic and 1/2 teaspoon salt. Sprinkle the remaining 1/2 teaspoon salt over the grated cucumber and drain, 10 to15 minutes, to extract excess water. Add drained cucumber to yogurt, along with pepper, and mix well. Cover and refrigerate until chilled, about 1 hour. Drizzle with olive oil and garnish with mint leaves. Serve with pita triangles or grilled fish.
This recipe is from foodnetwork.com. I went looking for a low calorie sauce to put on my falafel pita and since this is what I get on mine from pita pit, I thought I'd give it a go myself. I may adjust this and make it my own when I make it. When I do, I'll adjust it here.
