My Mexican Rice

Introduction

Great when I'm craving taco bell! Great when I'm craving taco bell!
Number of Servings: 2

Ingredients

    1 Cup brown rice, cooked
    1/2 Cup chopped tomato
    1/2 Cup chopped onion
    1/4 Cup corn
    1/4 Cup cooked/canned black beans
    3 Tablespoons Lite Ranch dressing
    1 Tablespoon taco seasoning
    handful Taco seasoned cheese

Directions

1. Mix all ingredients together so that all is coated with ranch dressing and taco seasoning. Add as much or as little cheese as you like.

2. Enjoy!

Makes 2 servings, approx 1.25 cups each.
