Thai Marmalade Tenderloin Roast

Introduction

Just another something I threw together. This is great served over rice with broccoli for some extra veggies! Just another something I threw together. This is great served over rice with broccoli for some extra veggies!
Number of Servings: 6

Ingredients

    1.75lb pork tenderloin
    2 cups baby carrots
    1/2 cup Iron Chef Orange Ginger Glaze
    1/2 cup sugar free orange marmalade
    1/4 cup water
    2 tbsp apple cider vinegar
    2 tbsp thai chili paste


Directions

Toss all of the ingredients together in a 4-quart crockpot. Make sure the carrots and meat are well covered in the liquids.

Cover and cook on low for 6-8 hours or on high for 4-6 hours.

Serving Size: Makes 6 Servings
