Cornish Hens with Wild Rice

Number of Servings: 4

Ingredients

    2 Cornish Hens
    1 T. Salt
    1 t. black pepper
    1 t. garlic powder
    1 t. Two Sister's Gourmet Southwest Seasoning Blend
    2 boxes Uncle Ben's Long Grain and Wild Rice (original recipe)
    1 can cream of onion soup

Directions

Place hens in baking dish. Mix together seasonings and rub onto hens. Bake at 350 degrees about 60-90 minutes until 170 degrees. Prepare rice according to package directions - I did not add butter or oil. After prepared, stir in Cream of Onion soup and make sure it it heated through. Serve 1/2 chicken with rice.

Serving Size: Makes 4 servings - 1/2 hen plus rice
