Introduction

No one will notice there's no sugar in this dessert...the combination of tart cranberries and subtly sweet almond meal and coconut is fabulous! No one will notice there's no sugar in this dessert...the combination of tart cranberries and subtly sweet almond meal and coconut is fabulous!

Ingredients

    All ingredients used are organic, down to the cinnamon:

    4 c fresh cranberries, rinsed
    2 c almond meal
    1 stick salted butter, at room temperature
    .5 c shaved coconut
    3 tbsp cinnamon
    .25 tsp sea salt

Tips

Variations on a theme:
Add:
fresh raspberries
bittersweet chocolate bits
grated orange zest
cloves, nutmeg, ginger
homemade Chantilly cream on the side
walnuts, hazelnuts, pecans


Directions

Preheat oven to 350
In a large bowl, knead all ingredients except cranberries until crumbly;
Cover bottom of a 9x9 ungreased baking pan with half the crumbles; add cranberries, cover with remaining crumbs and bake uncovered for 30 minutes;
Serve warm.
