Chocolate Mint Truffles

Ingredients

1/4 c oat flour
1/4 c flax meal
1/4 c cocoa
1/2 c almond meal
1/2 - 1 tsp peppermint extract
3 TBSP maple syrup
1-2 TBSP chocolate mint drink (soy or coconut)
Optional: 1 TBSP melted coconut oil or coconut butter
Tips
Optional: Add 1 TBSP melted coconut oil or butter. Otherwise, batter is a little dry, but still sticks together.
Obviously, the more peppermint extrac you add, the more peppermint flavor your truffles will have. I used 1/2 tsp, and my truffles were plenty minty.
Directions
In a small bowl, combine dry ingredients. Add wet to dry. Smash with the back of a spoon to make ingredients stick together. Form into small-medium sized balls. (Dampen hands if batter begins to stick to hands or doesn't roll together.) Refridgerate.
