Spaghetti Squash with Meat Sauce

Introduction

Even Squash haters will eat this. This is an easy recipe that gives you some time to get things done in the kitchen while it cooks. Plus you get to have sausage without feeling guilty since there is so much vegetable. Even Squash haters will eat this. Number of Servings: 5

Ingredients

    6 cups Spaghetti Squash (one average size squash)
    1/2 lb ground Italian Sausage
    1 can (26oz) Hunt's Spaghetti Sauce (Garlic and Herb)
    1 tsp Italian Seasoning (optional)

Tips

Do not try sawing the squash in half with a serrated edge knife, it is very hard. Use a butcher knife and wack it. Be careful because either way the knife will get stuck at some point.


Directions

Preheat oven to 375 degrees. Cut squash in half lengthwise and scoop out seeds. Spray baking pan. Place squash halves open side down on pan. Bake for 30min then turn over squash to open side up and bake an additional 30min.
During last 15 min of baking, fully cook Italian sausage in frying pan. Drain grease. Add spaghetti sauce and Italian seasoning. Let simmer.
Remove squash from oven when soft, it will look a little dry. Use a sturdy fork to scrape out squash. This will help it come out in spaghetti like strips.
Serve with sauce and enjoy.
