Black Bean Soup

Ingredients

    2 Tbsp Olive Oil
    1 small onion
    2 cloves garlic
    1 can (14 oz) black beans
    1 can (14 oz) pinto beans (or 2nd can of black)
    1 can (12 oz) Rotel tomatoes
    3 cups beef broth
    1 tsp cumin
    1 tsp ground red pepper (optional)
    1 tsp chili powder
    salt and pepper to taste

Directions

Add oil to a medium pot. Add onion and garlic. Saute until soft. Add both cans of beans, can of rotel tomatoes, and broth. Add spices. Bring to a boil. Lower heat and simmer for 10 minutes.
