Ingredients

1 c. onion, diced
1 c. green pepper, diced
2 cloves of garlic, diced
2 15.5 oz cans red beans-rinsed and drained
1 28 oz can no salt added crushed tomatoes
1 c. brown rice-uncooked
1 c. water
1/2 tsp. cayenne pepper
1 tsp. hot sauce
1 tbsp. oregano
1 tsp. thyme
1 tsp. black pepper
Tips
Directions
Water saute onions, green pepper, garlic and green onions until tender. Add remaining ingredients. Bring to a boil. Reduce heat and simmer until rice is cooked, about 40 minutes.
Makes 8-1 c. servings. Best served with a big dollop of sour cream on top.
