Hearty Beef Barley Stew

Introduction

This is a recipe that I developed for my husband when we were still dating. I like to make it with buffalo instead of beef and prefer fresh vegetables. However, this makes it quick and easy. You can even prepare it in a crockpot. Just make sure you turn it to high when you add the barley and then let it cook for and hour. Ingredients

    1 lb london broil, trimmed and cubed
    2 bags frozen vegetables for stew
    1 can (15 oz) Rotel Tomatoes
    1 can (15 oz) stewed tomatoes
    6 cups beef broth
    1 cup red wine (use a good one)
    1 tsp thyme, dried
    2 cups pearled barley, uncooked

Directions

Brown london broil and add to a large stockpot. Add the vegetables, tomatoes, broth, wine and thyme. Bring to a boil, reduce heat, and simmer for 1 1/2 hours (or until the vegetables are cooked). Add the barley, bring to a boil again, then simmer for 1/2 hour to 45 minutes until the barley is cooked.

If you would like to make in a crockpot, add all ingredients except the barley to the crock. Cook on low for 6 to 8 hours. Increase heat to high, add the barley. Cook for 1 hr or until the barley is cooked.

We like to serve this with slices of artisan bread. Makes a very hearty, satisfying meal on a cold day!
