Chocolate Zucchini Bread

Introduction

Number of Servings: 48

Ingredients

    3 eggs
    1 cup oil
    2 cups sugar
    1 tblsp vanilla
    2 cups shredded zucchini
    2-1/2 cups flour
    1/2 cup cocoa
    1 tsp salt
    1 tsp baking soda
    1 tsp cinnamon
    1/4 tsp baking powder

Directions

In large bowl beat eggs, oil, sugar and vanilla. Stir in zucchini. Combine all dry ingredients and add to the zucchini mixture. Pour into 3 small loaf pans that have been greased and floured. Bake at 350 degrees for 1 hour or until top springs back when touched.
