Ingredients

    1 medium banana, very ripe
    3 egg whites, lightly whisked
    2 T coconut flour
    1/4 tsp. baking powder
    1/4 tsp. cinnamon

Tips

I often have overripe bananas that I freeze. I take one of those and thaw it out for this recipe.

Delicious with additional toppings like fruit or some coconut butter.

Directions

Preheat oven to 350.

Spray a ramekin or small baking dish with cooking spray.

In a bowl, mash the banana until it's almost liquidy. Stir in the coconut flour, baking powder and cinnamon then whisk in the egg whites.

Pour batter into baking dish and bake at 350 for 20-25 minutes.

Serving Size: One Serving
