Hamburger Vegetable Soup

Introduction

This is a beef recipe but I use ground turkey and it tastes just as good. I also added a can of black beans: drained and rinsed off, and because I added the beans I added an additional cup of vegetable juice. Ingredients

    1 pound ground turkey
    1 medium onion chopped
    2 garlic cloves, minced
    4 cups V8 juice: low sodium
    1 can (14-1/2 oz) stewed tomatoes
    2 cups coleslaw mix
    2 cups frozen green beans
    2 cups frozen corn
    2 tablespoons worcestershire sauce
    1 teaspoon dried basil
    1/2 teaspoon salt
    1/4 teaspoon pepper

    My tweaks...
    1 can (14-1/2 oz) black beans drained and rinsed off to cut the salt content
    1 more cup of vegetable juice
    1 teaspoon of Italian seasoning

Tips

I am not sure of the serving sizes, the recipe I copied it from only says 10 serving, so if someone could let me know how I could calculate the size I would appreciate it. I am thinking one cup servings?


Directions

In a large saucepan, cook beef, onion and garlic over medium heat until meat is no longer pink: drain. In a 5 quart slow cooker, combine the remaining ingredients. Stir the beef mixture. Cover and cook on low for 8-9 hours or until vegetables are tender. Yield: 10 servings
