Introduction

The best way through to a man's (or woman's, for that matter) heart is through the stomach... these ribs will have a ring on your finger in short order, or perhaps an anniversary trip to Hawaii? The best way through to a man's (or woman's, for that matter) heart is through the stomach... these ribs will have a ring on your finger in short order, or perhaps an anniversary trip to Hawaii?
Number of Servings: 6

Ingredients

    5 lbs short ribs, cut in 2” pieces and trimmed
    1 tsp olive oil
    2 onions, quartered
    4 garlic cloves, chopped
    3 shallots, peeled
    1 cup dry red wine
    1 tsp dried basil
    1 tsp dried thyme
    1 tsp oregano
    28 oz can diced tomatoes, with juice
    2 cups hot beef stock
    1 tbsp tomato paste

Directions

Preheat oven to 350F
Heat oil in a Dutch oven until very hot. Add short ribs and sear on all sides.
Add onions, garlic and shallots.
Reduce heat to medium and cook 6 minutes.
Add remaining ingredients, mix well.
Bring to a boil, cover and place in oven.
Cook 3 hours.

  • I did this on the grill, I think they turned out better this way. I didn't use the beef stock to cut down on sodium, I used water instead. I also did not use the diced tomatoes, turned out great and will do this again. - 8/20/09
