2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, chopped
2 small red potatoes, peeled & chopped
2 large carrot, peeled & chopped
2 celery, chopped
2 tbsp curry powder
1/4 tsp cayenne pepper
5 cups veggie broth
3 cups crushed tomatoes/pure tomato sauce
2 cups lentils, rinsed, drained
Use a 1/2 tsp. of cayenne if you like it extra spicy!
Mix in curry powder and cayenne and stir until fragrant, about 30 seconds.
Add broth, tomatoes, and lentils. Bring to boil.
Cover pot. Reduce heat to medium-low. Simmer until lentils are very tender -- about 45 minutes.
Season to taste with salt and pepper.
