Cabbage Rolls

Introduction

Number of Servings: 4

Ingredients

    1/2 head of cabbage, boiled
    2 tbsp avocado oil (olive oil can be subbed)
    1 small white onion
    1 carrot, shredded
    5 mushrooms, diced
    1 clove garlic, minced
    1/2 tsp cumin powder
    1/4 tsp chili powder
    1/5 cup black beans (cooked in water, no salt)
    1 tsp vegetarian chicken base (I use better than bullion - if you aren't a vegetarian, any stock base will do -- or sub one cup of broth for the base and the beer)
    8 oz beer (lighter is better - recommend you use a Mexican beer -- as above, you can sub broth for the beer and the base)
    1/2 cup + 1 tbs salsa (store bought is fine here)

Directions

1. Heat avocado oil (or olive oil) over medium high heat; add the onion, and saute onion until it begins to soften. Add the carrot, cooking until both are soft.
2. Add garlic and mushrooms - cook until fragrant and mushrooms are soft.
3. Stir in cumin and chili powders to coat.
4. Add veggie base and beer , stir in black beans and 1 tbs salsa. Turn heat higher, and boil until most of the moisture is cooked off, stirring regularly.
5. Spoon 1-2 tbs of the mixture into pre-boiled cabbage leaves. Wrap up, tucking in the ends.
6. Heat a skillet over med-high heat, and place cabbage rolls in, seam-side down. Spoon the 1/2 cup of salsa over each.
7. Once it starts to boil/sizzle (this won't take long), cover and reduce heat to low. Cook for 40 minutes and then serve.

Serving Size: Makes 8 rolls (when using larger leaves) - serving = 2 rolls
