Potato Vegetable Salad

Potato Vegetable Salad

Number of Servings: 8


    4 medium potatoes, scrubbed well, skin on
    3 spring onions, chopped
    1/2 cup parsley, chopped
    100g red capsicium, seeded and diced
    100g green capsicium, seeded and diced
    1 stick celery, sliced
    1/4 cup low fat mayonaise
    1/4 cup low fat sour cream
    2 Tbs Italian Dressing, low calorie


Prick potatoes, place round edge of microwave turntable and cook on MedHigh 70% 10 min or until tender. Cool, Cut into 1/2" dice
To the potato add, spring onion, parsley, celery and capsicium. Toss to mix
In a separate basin, mix the Italian dressing, mayonaise and sour cream
Pour over the vegetables and toss to coat, Chill until ready to serve.
