Breakfast burrito

Introduction

I searched many recipes and some things I don't care for, so this is what I came up with for a burrito. I searched many recipes and some things I don't care for, so this is what I came up with for a burrito.
Number of Servings: 1

Ingredients

    Eggs (I used 5 to make extra burritos at one time, I spread them out into 4 burritos)
    Cheese
    Tortilla Shells
    Salsa


Tips

I try not to cook the eggs completely because I like to zap mine in the microwave so that the cheese will melt. Also if you make these ahead, you will want to reheat them, this way the eggs do not take rubbery.


Directions

Spray skillet with low fat cooking spray, scramble eggs in a bowl, then add to skillet. Scramble until light and fluffy. Place cheese on tortilla shell, once eggs are done, spread on the 4 shells, top with salsa.

Serving Size: Makes 4 8" burritos
