Introduction

This was just a quick breakfast casserole, made with egg beaters. I basicly took all of this weekends left overs and tossed THEM IN

I typically make these casseroles and take the pan to work... for breakfast each morning.

I typically make these casseroles and take the pan to work... for breakfast each morning.


Number of Servings: 6

Ingredients

    4 cups of egg beaters
    Diced link sausage
    Chopped Onions
    Chopped Green Peppers
    Diced Tomatos

    and a cup of shredded cheese

Tips

Check the casserole every 3 minutes and occationally scoot the eggs around making it appear they have been scambled

Directions

Pour 2 cups of the egg beaters into a small square pan or a baking dish and let the edges stiffen. Once the edges have stiffened with a fork or spatula softly scoot the edges into the center of the casserole, and let cook for 5 more minutes.

Now add all of you toppings evenly across the casserole.

Now add the remaining 2 cups of egg beaters and let cook until stiff.

Then sprinkle with additional cheddar cheese
